This is a sauce that I use for steaks and for pork. A bit luxurious but it's nice and easy to do and takes only a few minutes
What you need:
Small onion Cracked black pepper or pepper from a pepper mill A carton of cream (low fat if you're counting calories) A dash of brandy
How to make it
Chop up the onion very finely and fry gently in a little oil in a small saucepan for a few minutes
Add in pepper - as much or little as you want and cook it for another minute or two
Add a dash of brandy and cook it out or if you're brave set fire to it to burn off the alcohol. I use a really cheap brandy, I wouldn't waste the good stuff for cooking!
Pour in the cream and leave it to simmer (stir occasionally) until it's thickened up.
